Recipe- Make Leftover Idli Delicious With Idli Upma

Leftover Idli Upma is quick and easy way to use leftover Idli. This uses simple readily available ingredients and tastes amazing. You can have it as a snack or breakfast. Moreover, this is very simple to make. Everyone will love this dish because everyone likes Idli, especially kids. This is a healthy dish as it uses veggies like capsicum, green peas, tomato. Ingredients

Leftover Idli - 10 to 12 chopped
Tomato - 2 medium sized (pureed)
Boiled peas - 2 Tablespoon
Capsicum - 1 diced
Mustard seeds - 1/2 Teaspoon
Curry Leaves - few chopped
Turmeric powder - 1/2 Teaspoon
Red Chillli powder - 1/4 Teaspoon or as per taste
Cumin powder - 1 Teaspoon
Chaat Masala - as per taste
Cashew Nuts - a handful
Coriander Leaves - as required
Salt - as per taste
Oil - 1 Tablespoon

Method

* Heat oil in a pan. Saute cashew nuts on a low flame for few seconds.

* Take the cashew nuts out on a plate and keep aside.

* In the same oil, add mustard seeds and curry leaves.

* Then add tomato puree, boiled peas. Mix well and cook.

* Add turmeric powder, red chilli powder, salt, cumin powder, chopped capsicum and cook on a low flame for a minute.

* Add 1/2 cup water and cashew nuts. Bring the water to boil.

* Once boiled, add chopped Idli. Mix well to coat all Idli pieces.

* Garnish it with coriander leaves and switch off the gas. Sprinkle chaat masala on top.

* Delicious Idli Upma is ready to be served.
