Recipe- Mexican Street Style Esquites

Ingredients

4 ears of corn, shucked
2 tablespoons of butter
2 tablespoons of mayonnaise
2 tablespoons of crumbled queso fresco cheese
1 tablespoon of chili powder
1/4 cup of chopped fresh cilantro
1 lime, cut into wedges
Salt to taste

Method

- Cut the kernels off the corn cobs with a sharp knife.

- In a large skillet over medium heat, melt the butter.

- Add the corn kernels to the skillet and cook for 5-7 minutes, stirring occasionally, until the corn is lightly browned and cooked through.

- In a separate bowl, mix together the mayonnaise, queso fresco cheese, chili powder, cilantro, and salt.

- Once the corn is cooked, add the mayonnaise mixture to the skillet and stir to coat the corn evenly.

- Cook for another 1-2 minutes until the mixture is heated through.

- Remove from heat and serve immediately with lime wedges on the side.
