To make Aloo Gobhi Sabji, diced potatoes and cauliflower florets are first cooked in a pan with oil, cumin seeds, and other spices such as turmeric, coriander powder, and garam masala. The dish is then simmered in tomato puree and garnished with fresh cilantro.

Ingredients
2 cups diced potatoes
2 cups cauliflower florets
2 tablespoons oil
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1 teaspoon turmeric powder
1 tablespoon coriander powder
1 teaspoon red chili powder
1 teaspoon garam masala powder
1/2 cup tomato puree
Salt to taste
2 tablespoons chopped fresh cilantro leaves for garnishing
Method
- In a large pan, heat the oil over medium heat.
- Add the cumin seeds and mustard seeds and let them splutter.
- Add the diced potatoes and cauliflower florets to the pan and mix well.
- Add turmeric powder, coriander powder, red chili powder, and garam masala powder to the pan and mix well.
- Add tomato puree and salt to the pan and mix well.
- Cover the pan with a lid and simmer for 10-15 minutes or until the vegetables are tender.
- Once the vegetables are cooked, remove the lid and stir the mixture gently.
- Garnish with chopped cilantro leaves and serve hot with roti, naan, or rice.
