Recipe- Roasted Sweet Potatoes Are An Addictive Side Dish

Roasted Sweet Potatoes are super simple to make yet so delicious and addictive side dish that is cripsy on the outside, soft and delicate on the inside.This dish is so flavorful that it hard to stop once you start eating this. The sweetness from the sweet potatoes compliments so well with onion, garlic, jalapeno, fresh rosemary, butter and oil. No additional spices or flavorings are required. These can be served as a side with chicken, pork or even in your burrito bowls or tacos or simply with steamed rice and they just taste amazing.
Ingredients
3 Sweet Potatoes cubed
1 Red onion diced
1 bulb Garlic crushed and peeled
1 Jalapeno or Serrano chopped
1 tbsp Rosemary fresh & chopped
3 tbsp Melted butter (use coconut oil for vegan version)
3 tbsp Olive oil
Salt to taste
Method
* Preheat the oven to 425 degree F.
* Prep the sweet potatoes by roughly peeling off the skin. Chop them into bite sized cubes.
* In a large bowl, add sweet potatoes, cubed onion, garlic, jalapeno, rosemary, butter, olive oil, salt and toss till combined.
* Spread this evenly in a single layer on a baking pan. Bake it in the preheated oven for 25 minutes.
* Broil on high for a minute or two or until golden brown.
* Roasted Sweet Potatoes are now ready. You can garnish with parsley and fresh rosemary and serve.
* Baking time may vary depending on the size of the potatoes.
