Recipe- Soft and Fluffy Malpua

Malpuas are an Indian version of pancakes that are soft, fluffy and yet crisp. Malpuas are soft from the inside, but their edges are crisp. They are deep fried and then immersed in sugar syrup. Traditionally malpuas are prepared from maida/all purpose flour. But we have used whole wheat flour to make these yummy and delectable malpuas more healthy and that too without compromising on their taste.

Ingredients

For The Malpua Batter


1 cup whole wheat flour/gehun ka atta
2 tablespoon sugar
2 tablespoon curd/dahi
1/4 teaspoon baking soda
pinch of salt
1/2 - 1 cup water

For the Sugar Syrup

3/4 cup sugar
1/3 cup water
pinch of cardamom powder

Other Ingredients

5-7 cashews thinly sliced
5-7 almonds thinly sliced
5-7 pistachios thinly sliced
oil/ghee for deep frying

Method

For the Malpua Batter


- In a wide bowl, combine whole wheat flour, curd, sugar, salt, baking soda and mix well.

- Gradually add water and keep stirring continuously with a beater/whisk. Mix well till it forms a smooth flowing batter. Make sure there are no lumps in the batter. Do not add water at once. Quantity of water will depend on the quality of wheat flour used. Hence, it will vary accordingly.

- Set aside for 15-20 minutes.

For the Sugar Syrup

- To prepare sugar syrup, add sugar and water in a pan and allow to boil. Once the syrup starts boiling, reduce the flame to low and check the consistency of sugar syrup.

- You should have a one string consistency sugar syrup.

- Switch off the flame and add cardamom powder. Set aside.

Preparing Malpuas

- Heat oil/ghee in a broad thick bottomed pan on low to medium flame.

- Pour a small ladle full of batter in the centre of the pan without spreading it. The batter will spread on its own.

- Do not try to touch the pancake till it starts to turn golden along the edges. It will slowly get immersed in the ghee and cook on medium flame till the sides are golden brown.

- Once sides become golden brown, flip it over and cook for another 2-3 minutes or till it turns golden brown.

- With the help of a slotted spoon, drain the Malpua and place it in the sugar syrup immediately. Fully immerse the malpua in sugar syrup for half a minute. Make other malpuas in the same manner.

- Remove malpua from the sugar syrup and then place it on a serving plate. Sprinkle sliced nuts over the malpuas.
