Recipe- Super Healthy For Breakfast Mix Veg Paratha or Penny Paratha

Penny Paratha is a Paratha that is basically a small shape paratha, just like the shape of a penny. I made these for my 3 years old daughter because she doesn’t like big size paratha.

The paratha is also a creative way to make my daughter eats vegetables because nowadays kids don’t love vegetables and every day they want something new to eat. This paratha is delicious, healthy and full of nutrients because it is made up of lots of fresh vegetables and can be served with chutney, pickles, etc.

Ingredients

1 Pc Green Capsicum Chopped
1 Pcs Onion Chopped
2 Pcs Carrot Grated
1/2 Cup Cauliflower Grated
2 Big Size Potato Grated
1 Tbsp Coriander leaves Chopped
1 Pcs Green Chilli Chopped
1 tsp Ginger Garlic Paste
2 1/2 Cup Wheat Flower
1 tsp Carom seeds
1 tsp Kashmiri Red Chilli Powder
1 tsp Dry Mango Powder
1/2 tsp Garam Masala Powder
Salt As Per Taste
Water As required
Oil As required

Method

* In a bowl take the boiled and grated potatoes.

* Now add chopped capsicum, grated carrot and chopped onions.

* Now add grated cauliflowers, chopped coriander leaves and chopped green chilli.

* Add wheat flour. Add carom seeds, ginger-garlic paste.

* Now add salt, dry mango powder, garam masala and Kashmiri red chilli powder. Add 2tbsp oil.

* Mix all the ingredients well and knead the dough. Add water if required.

* Add 1 tbsp of oil and knead the dough again. Rest the dough for 10 minutes.

* Now take a ball shape of dough and roll it with the help of a rolling pin.

* Take a small round cutter and cut it in the round shape.

* Heat the pan, add some oil. Now put the paratha on it.

* Cook the paratha from one side when it becomes slightly brown and flip over. Add some oil on both sides.

* Cook the paratha from both the sides.

* Serve HOT with curd.
