Healthy Apple Crisp is sweet, delicious, and made with good for you ingredients like apples, oats, coconut, and pecans. It's sweetened with a little bit of coconut sugar and makes the perfect fall dessert. This one tastes like your best apple crisp dreams, but it's made without any flour, dairy, or refined sugars. I promise no one will notice this ‘healthy' version and you'll be sung praise through muffled, dessert-filled mouths.
Ingredients
The Apple Crisp
6 apples, peeled, cored, and diced
¼ cup coconut sugar
1 teaspoon each: cinnamon and vanilla
½ teaspoon each: nutmeg and sea salt
Topping
1 cup old-fashioned rolled oats, gluten-free, if needed
1 cup unsweetened shredded or flaked coconut
½ cup pecans, chopped
¼ cup coconut sugar
¼ cup coconut oil, melted
Method
* Preheat your oven to 350 degrees.
* In a large bowl, mix the apples with the coconut sugar, cinnamon, vanilla, nutmeg, and sea salt. Transfer to a deap-dish pie pan and gently press down.
* In a small bowl, mix together all the topping ingredients. Spread the topping evenly over the apples.
* Bake for 60 minutes (see notes) until the topping is golden and the apples are soft and bubbling. Check the apple crisp after 40 minutes and, if the topping is getting too brown, loosley cover the pie pan with aluminum foil. Let rest for 15 minutes before serving.
