Ingredients

All purpose flour – 2.5 cups
Sugar – 2 cups
Butter – ¾ cup, melted
Eggs – 4
Milk – 1 cup
Baking powder – 2.5 tsp
Vanilla essence – 1 tsp

Method

* Preheat oven to 180⁰C/350⁰F/Gas Mark 4.

* Prepare a 9 X 13 inch rectangular baking pan by brushing the pan sides and bottom with a little butter.
* Add some flour to the pan.

* Tap the pan bottom for even coating. Tilt to get rid of excess flour.

* Alternatively, you can prepare the pan by lining its bottom and sides with a parchment paper.

* Sieve flour with baking powder twice and keep aside.

* Add eggs and sugar to a mixing bowl. Using a mixer or beater, beat the mixture until it turns slightly thick.

* Add the sieved dry ingredients, melted butter, and milk to the egg mixture.

* Beat until the batter turns creamy and smooth.

* Add vanilla essence and give the mixture a quick mix.

* Transfer to prepared pan and bake for about 35 to 40 minutes or until a cake teaser inserted comes out clean.

* Take out the pan from the oven and allow to cool slightly.

* With a knife, loosen the cake and transfer to a rack for complete cooling.

* Allow to cool thoroughly before layering and frosting.
