2 cups milk

Method

- Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

- In a medium-sized saucepan, bring the milk to a boil. Add the soaked and drained rice to the boiling milk and reduce the heat to low. Simmer for about 25-30 minutes, stirring occasionally until the rice is cooked and the mixture thickens.

- Remove the saucepan from the heat and allow the kheer to cool to room temperature. The kheer will thicken further as it cools.
