Corn cutlet is a delicious Indian snack made by shallow frying a mixture of paneer and sweet corn. A mouth watering, healthy and very easy to make snack which can be served for breakfast or as an evening snack. it's perfect snack or appetizer which can be served as starters for party,

Here are some important tips and suggestions to make this a perfect recipe. firstly, use corn flour as the binding agent in this corn cutlet recipe. Alternatively, even rice flour can also be used to which makes this kabab even more crispy. Secondly, the shapes of the kabab is open ended and can be given any shapes as per the choice.

Ingredients

200 gms boiled corns
100 gms grated paneer
Bread crumbs(1bread slice)
1 table spoon chat masala
1/2 teaspoon red chilli powder
1 green chilli finely chopped
1/2 teaspoon ginger finely chopped
1 teaspoon coriander
1 teaspoon lime juice
1 small sized onion(finely chopped)
Salt according to taste
Oil for shallow frying

Method

1. In a small blender take boiled corns and grind to a coarse paste without adding water.

2. Transfer the corns into a bowl and add grated paneer, bread crumbs, chat masala, red chilli powder, onion (optional), ginger, lemon juice and chopped coriander. Adding lime juice provides a chatpata flavor to the sweet corn tikkis.

3. Add salt and bind the material and make round tikkis.

4. Take a non stick pan or cast iron pan or tawa and put minimum oil for shallow frying. Fry the tikkis till they are crisp and golden brown on both sides.

5. Sprinkle a little oil on tikkis and bake them according to the temperature setting of your oven.

6. Serve them hot with mint chutney or any other dip of your choice.

Tips for making perfect corn cutlets or tikkis

1. To make perfect tikkis cook them on a medium flame.
2. Flip the tikkis carefully and gently with the wooden spatula until bottom side is golden brown otherwise they may break as they are quite soft from inside.
