Recipe - Delicious And Flavorful Bihari Style Mutton Kabab

Bihari cuisine is known for its unique and spicy flavors, and one of its most popular dishes is the mutton kabab. Made with tender mutton, aromatic spices, and a few simple ingredients, this dish is perfect for any occasion, whether it's a family gathering or a festive celebration. In this article, we will guide you through the process of making authentic Bihari style mutton kabab.
Ingredients
500 grams of mutton (boneless, cut into small pieces)
2 tbsp ginger-garlic paste
2 tbsp raw papaya paste
2 tbsp mustard oil
1 tsp red chili powder
1 tsp coriander powder
1 tsp cumin powder
1 tsp garam masala powder
Salt (to taste)
Wooden skewers (soaked in water)
Method
- In a bowl, marinate the mutton pieces with ginger-garlic paste, raw papaya paste, mustard oil, red chili powder, coriander powder, cumin powder, garam masala powder, and salt. Mix well and keep it aside for at least 2 hours or overnight in the refrigerator.
- Preheat the oven to 180°C. Thread the marinated mutton pieces onto wooden skewers.
- Place the skewers on a baking tray and bake for 15-20 minutes or until the kababs are cooked through and lightly browned on the outside. You can also cook the kababs on a grill or barbecue for a smoky flavor.
- Serve the mutton kabab hot with mint chutney and sliced onions.
Tips:
- To make the raw papaya paste, blend fresh raw papaya in a mixer until smooth.
- Mustard oil is commonly used in Bihari cuisine for its strong flavor and aroma. However, if you don't have access to it, you can use any vegetable oil instead.
- Soaking the wooden skewers in water prevents them from burning while cooking.
