Ingredients

8 slices of white bread
1 cup of malai (clotted cream)
2 tablespoons of finely chopped onion
1 tablespoon of finely chopped green chilli
1 tablespoon of finely chopped coriander leaves
Salt to taste
Butter for toasting

Method

- In a bowl, mix the malai, chopped onion, green chilli, coriander leaves and salt together.

- Take a slice of bread and spread the malai mixture evenly over it. Cover the malai mixture with another slice of bread.

- Heat a non-stick pan over medium heat. Add a little butter to the pan.

- Place the sandwich on the pan and cook until the bread turns golden brown and crispy on both sides. This should take about 2-3 minutes per side.

- Once the sandwich is cooked, remove it from the pan and cut it into halves or quarters.

- Serve hot with ketchup or green chutney.

Tips

- You can add grated cheese, sliced tomatoes or cucumbers to the sandwich for extra flavor.
- Use a non-stick pan to prevent the sandwich from sticking to the pan.
- Be careful not to overcook the sandwich, as the malai filling may start to melt.
