Ingredients
500 grams arbi (taro root), peeled and cut into cubes
2 tablespoons oil
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to taste)
1 teaspoon amchur (dried mango powder)
1 teaspoon chaat masala
Salt to taste
Fresh coriander leaves, finely chopped for garnishing
Method
- Boil the arbi cubes in salted water until they are fork-tender. Drain the water and set aside.
- Heat oil in a pan or kadai over medium heat. Add cumin seeds and mustard seeds and let them splutter.
- Add the boiled arbi cubes to the pan and sauté for a few minutes until they turn golden brown.
- Sprinkle turmeric powder, red chili powder, amchur, chaat masala, and salt over the arbi. Mix well to coat the spices evenly.
- Cook the arbi on medium-low heat, stirring occasionally, for about 10-12 minutes or until they are crispy on the outside and tender on the inside.
- Once cooked, transfer the Chatpati Arbi to a serving dish and garnish with freshly chopped coriander leaves.
