Recipe- Easy and Delicious Vegetable Au Gratin

Vegetable au gratin recipe is a continental delicacy made with mixed vegetables and white sauce as base.Vegetable au gratin or veg au gratin has all the vegetables drowned in white sauce with lots of cheese, its creamy with a crusty top.It can be served with toasted bread.

Gratin is a French word a technique in which the top has a golden brown crust usually used with breadcrumbs or grated cheese.A gratin is baked or grilled to form a golden crust on top.

Ingredients

2 cups mixed vegetables
1/2 cup cheese
1/4 tsp oregano

For The White Sauce

1 tbsp butter
1 tbsp flour
1 cup milk
a generous pinch freshly ground pepper
salt to taste

Method

* Heat butter - when it is melting add the flour.

* Cook the flour for 3-5 mins then immediately add milk.

* Cook in medium flame, it will bubble.Keep stirring with a whisk.Whisk vigorously until smooth so that there are no lumps forming. It will start to thicken,I switched to spatula now.

* It will form a smooth creamy paste like consistency,It should coat the laddle, and when you draw a line it should stand still as shown in the picture.This is the right consistency.

* Add salt and pepper.If you want you can add nutmeg powder too.Mix well.Now the basic white sauce is read.You can add cheese if you prefer at this stage. It depends on the recipe you want to use this recipe.

* Add 1/4 cup cheese to the sauce,mix it and switch off.Now rinse all the vegetables and cook them until soft yet crunchy enough to bite.I pressure cooked them for 2 whistles.Preheat oven at 200 deg C for 10mins.

* Drain water(you can use it for any soup) and add the cooked vegetables to the white sauce.Add oregano or mixed herbs and mix well.

* Transfer it to a oven safe baking tray, Sprinkle remaining 1/4 cup cheese on top.Bake in preheated oven at 200 Deg C for 20mins or util the top turns golden.I grilled for the last 3 mins for a crusty top.
