Ingredients
1 pound (450g) goat testicles
2 onions, finely chopped
4 cloves of garlic, minced
1-inch piece of ginger, grated
2 tomatoes, finely chopped
2 green chilies, slit lengthwise
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon red chili powder (adjust according to your spice preference)
1/2 teaspoon garam masala
1/4 cup yogurt
Salt to taste
Fresh coriander leaves for garnish

Method
Preparing the Goat Testicles:
- Start by cleaning the goat testicles thoroughly under running water.
- Remove the outer membrane by gently peeling it off with your fingers.
- Cut the testicles into small bite-sized pieces and set them aside.
Cooking the Goat Testicles Curry:
- Heat oil in a large pan or skillet over medium heat.
- Add the finely chopped onions and cook until they turn golden brown.
- Add the minced garlic and grated ginger to the pan. Sauté for a couple of minutes until fragrant.
- Stir in the chopped tomatoes and cook until they soften and release their juices.
- Add the green chilies, ground turmeric, ground cumin, ground coriander, red chili powder, and salt. Mix well and cook for another few minutes.
- Lower the heat and add the yogurt, stirring continuously to prevent curdling.
- Once the spices are well incorporated, add the goat testicle pieces to the pan and coat them evenly with the spice mixture.
- Cover the pan and simmer the curry for about 45 minutes to 1 hour, or until the goat testicles are tender and cooked through.
- Stir occasionally and add water if needed to maintain a desired consistency.
