Ingredients
6 boiled eggs, peeled and slit lengthwise
1 large onion, finely chopped
2 tomatoes, finely chopped
1/2 cup grated coconut
1/4 cup cashew nuts
1 tablespoon ginger-garlic paste
2 tablespoons Mangalorean curry powder (can be substituted with garam masala)
1 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to taste)
1 teaspoon cumin seeds
1 teaspoon mustard seeds
A few curry leaves
1 tablespoon tamarind pulp
2 tablespoons vegetable oil
Salt to taste
Fresh cilantro leaves for garnish
Method
- Start by boiling the eggs until they are hard-boiled. Once done, peel them and slit each egg lengthwise, creating openings for the flavors to seep in. Set them aside.
- In a blender, combine grated coconut and cashew nuts. Add a little water and blend until you get a smooth paste. Set this coconut-cashew paste aside.
- In a large pan, heat the vegetable oil over medium heat. Add mustard seeds and let them splutter, then add cumin seeds and curry leaves.
- Add the finely chopped onions and sauté until they turn translucent.
