Ingredients
1/2 cup Meyer lemon juice (about 4-5 Meyer lemons)
1 tablespoon Meyer lemon zest
3/4 cup granulated sugar
4 large eggs
1/2 cup unsalted butter, cubed
Method
- In a heatproof bowl, whisk together the Meyer lemon juice, Meyer lemon zest, sugar, and eggs until well combined.
- Create a double boiler by placing the bowl over a pot of simmering water. Make sure the bottom of the bowl does not touch the water.
- Cook the lemon mixture over medium-low heat, stirring constantly with a wooden spoon or silicone spatula. Continue stirring until the mixture thickens, which usually takes about 8-10 minutes.
- Once the curd has thickened, add the cubed butter to the mixture. Stir until the butter is fully melted and the curd becomes smooth and glossy.
- Remove the bowl from the double boiler and let the curd cool to room temperature. It will continue to thicken as it cools.
- Transfer the Meyer lemon curd to a clean glass jar or container. Cover with a lid and refrigerate for at least 2 hours to allow the flavors to meld together.
- The Meyer lemon curd can be stored in the refrigerator for up to two weeks. Enjoy it as a spread on toast, scones, muffins, or use it as a filling for cakes, tarts, and other desserts.
