1 cup moong sprouts
1 cup rice flour
1/4 cup finely chopped onions
1/4 cup grated carrots
2-3 green chilies, finely chopped
1/2 teaspoon ginger paste

Method

- Rinse the moong sprouts thoroughly and drain any excess water. Transfer the sprouts to a blender or food processor.

- Grind the moong sprouts to a coarse paste. You can add a little water if needed, but make sure not to make it too watery.

- In a mixing bowl, combine the moong sprouts paste, rice flour, chopped onions, grated carrots, green chilies, ginger paste, coriander leaves, and salt. Mix well to form a thick batter. Add water gradually to achieve a pouring consistency.

- Heat a non-stick dosa pan or a griddle over medium heat. Once hot, pour a ladleful of the batter onto the center of the pan.

- Spread the batter in a circular motion to form a thin dosa. Drizzle a little oil around the edges of the dosa.

- Cook the dosa on medium heat until the bottom turns golden brown and crisp. Flip the dosa carefully using a spatula and cook the other side for a minute or until it is cooked through.

- Remove the dosa from the pan and repeat the process with the remaining batter, adding oil as needed.
