Ingredients
200g paneer (cottage cheese), cut into bite-sized cubes
1 cup boiled and cooked noodles (hakka or regular)
1/2 cup gram flour (besan)
2 tablespoons rice flour
1 teaspoon ginger-garlic paste
1/2 teaspoon red chili powder
1/4 teaspoon turmeric powder
1/2 teaspoon garam masala
1/2 teaspoon chaat masala
Salt to taste
Water for batter
Oil for deep frying
For the Green Chutney (Optional):
1 cup fresh coriander leaves
1/2 cup fresh mint leaves
1-2 green chilies (adjust to taste)
1 teaspoon lemon juice
Salt to taste
Method
- In a blender, combine coriander leaves, mint leaves, green chilies, lemon juice, and salt. Blend until you get a smooth and vibrant green chutney. Set aside to serve as a refreshing dip for the pakoras.
- In a mixing bowl, add gram flour, rice flour, ginger-garlic paste, red chili powder, turmeric powder, garam masala, chaat masala, and salt. Mix well and gradually add water to make a thick yet smooth batter. The consistency should be such that it coats the back of a spoon easily.
- Take the paneer cubes and coat them with the prepared batter. Ensure each cube is evenly coated on all sides. Now, roll the batter-coated paneer cubes in the boiled and cooked noodles, gently pressing the noodles onto the paneer to adhere.
- Heat oil in a deep frying pan or kadhai over medium heat. Once the oil is hot, carefully drop the prepared noodles paneer pakoras into the oil. Fry until they turn golden brown and crispy on all sides. Remove with a slotted spoon and place them on a paper towel-lined plate to drain any excess oil.
