Recipe - Paneer Kathi Rol A Perfect Breakfast

Ingredients
200 grams paneer (cottage cheese), cut into small cubes or strips
2 tablespoons oil
1 medium-sized onion, thinly sliced
1 medium-sized capsicum (bell pepper), thinly sliced
1 medium-sized tomato, finely chopped
2 green chilies, finely chopped (adjust according to your spice preference)
1 teaspoon ginger-garlic paste
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon cumin powder
1 teaspoon coriander powder
Salt to taste
Freshly chopped coriander leaves for garnishing
4-6 rotis or parathas (Indian bread), warmed
Method
- Heat 1 tablespoon of oil in a pan over medium heat. Add the paneer cubes/strips and sauté until they turn light golden brown. Remove the paneer from the pan and set it aside.
- In the same pan, heat the remaining 1 tablespoon of oil. Add the sliced onions and sauté until they become translucent.
- Add the ginger-garlic paste and green chilies to the pan. Sauté for a minute until the raw aroma of the paste disappears.
- Add the sliced capsicum and chopped tomatoes to the pan. Stir-fry for a few minutes until the vegetables become tender, but still retain their crunch.
- Reduce the heat to low and add the turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Mix well to coat the vegetables with the spices. Cook for another 2-3 minutes.
- Add the sautéed paneer to the pan and gently mix everything together. Cook for an additional 2 minutes to allow the flavors to blend.
- Remove the pan from heat and garnish with freshly chopped coriander leaves.
- Warm the rotis or parathas on a tawa (griddle) or in a microwave.
- To assemble the Paneer Kathi Rolls, place a roti or paratha on a flat surface. Spoon a generous portion of the paneer and vegetable mixture onto the center of the roti. Roll it tightly, folding the sides as you go, to form a neat roll.
- Serve the Paneer Kathi Rolls hot and enjoy them as a wholesome breakfast or snack.
