Recipe - A Spicy Delight From Maharashtra Kolhapuri Chicken

Ingredients
500 grams chicken pieces, cleaned and washed
2 tablespoons oil
1 large onion, finely chopped
2 tomatoes, finely chopped
2 teaspoons ginger-garlic paste
2 teaspoons Kolhapuri red chili powder (adjust according to spice preference)
1 teaspoon turmeric powder
1 teaspoon cumin powder
1 teaspoon coriander powder
1 teaspoon garam masala
Salt to taste
Fresh coriander leaves for garnishing
Method
- Heat oil in a pan or kadai over medium heat. Add the chopped onions and sauté until they turn golden brown.
- Add the ginger-garlic paste and sauté for a minute until the raw smell disappears.
- Add the chopped tomatoes and cook until they become soft and mushy.
- Now, add the Kolhapuri red chili powder, turmeric powder, cumin powder, coriander powder, and salt. Mix well and cook the spices for a minute to release their flavors.
- Add the chicken pieces to the pan and coat them well with the spice mixture. Cook for a few minutes until the chicken starts to brown slightly.
- Reduce the heat to low, cover the pan, and let the chicken cook in its own juices for about 20-25 minutes. Stir occasionally to prevent sticking and ensure even cooking.
- Once the chicken is cooked and tender, sprinkle garam masala over it and mix well. Adjust the seasoning if needed.
- Garnish with fresh coriander leaves and remove from heat.
