Here’s what you can do, make a yummy cabbage capsisum rice (pulao) which is finger licking good. It can be made in a jiffy. You only need few ingredients for this.The aromatic long grained rice combined with chopped capsicum and cabbage makes this healthy and tasty Pulao. It serves perfectly well as a sumptuous and light dish for dinner.

Cabbage rice- Mildly spiced Indian variety rice using cabbage. Cabbage rice is an easy lunch box recipe and a quick one-pot meal that can be made for lunch or dinner. It is a very simple recipe that can be made by bachelors too. I first tried cabbage rice for dinner and my husband simply loved it and asked me to prepare it for his lunch the next day too. I came up with this recipe when I ran out of all vegetables and was left with just a piece of cabbage and capsicum. Addition of capsicum gives a nice aroma to the rice and this recipe is sure to appeal to even those who do not like cabbage as much.

Ingredients

Boiled Rice: 4 cups
Cabbage: 1.5 cups, finely chopped
Onion: 1, thinly sliced
Capsicum: 1, finely chopped
Biryani Masala: 1/2 tsp + 1/4th tsp
Garam Masala: 1/4th tsp
Cumin Seeds: 1/2 tsp
Cardmom Pods: 2
Cloves: 2
Cinnamon Stick: 1
Coriander: 1 tbsp, finely chopped + for garinishing
Oil: 2-3 tsp
Salt: To Taste

Method

* Heat oil in a pan and add cloves, cardamom pods, cinnamon stick and cumin seeds to it.

* Once the cumin seeds splutter add in the sliced onions. Cook the onions till they are light golden brown in color.

* Once the onions are done, add in the chopped cabbage and capsicum. I like the crunchiness of these veggies in the rice so I did not cook them for long. So cook for like 3 minutes only. Next add in the chopped coriander and mix well.

* The spices go in next, I used this Shaan vegetable biryani masala that I had in my kitchen but you can use any other brand or you can also use coriander powder instead.

* So add in the biryani masala, garam masala, red chilli powder and salt and give it a good mix.

* Add in the boiled rice next. Add it slowly while mixing the rice with the vegetables.

* Lower the heat and let the pulao simmer for 5 minutes. This is to ensure that the rice absorbs all the fragrance of the spices.

* Sprinkle some biryani masala on top and garnish the pulao with chopped coriander. Cabbage capsicum pulao is ready to serve.
