How to Make Sattu Kachori

Prepare the Dough:

- In a large mixing bowl, combine all-purpose flour, semolina, and salt.

- Add oil or ghee and mix well until the mixture resembles breadcrumbs.

- Gradually add water and knead to form a smooth dough.

- Cover and let the dough rest for 20-30 minutes.

Make the Sattu Filling:

- In another bowl, combine sattu, chopped onions, green chilies, coriander leaves, carom seeds, fennel seeds, and salt.

- Add mustard oil and mix thoroughly.

- Sprinkle a little water and mix until the filling holds together when pressed. Set aside.

Shape the Kachoris:

- Divide the dough into small lemon-sized balls.

- Flatten each ball slightly and make a well in the center.

- Place a spoonful of sattu filling in the well and gather the edges to seal.

- Gently flatten the filled dough ball to form a disc. Repeat with the remaining dough and filling.

Fry the Kachoris:

- Heat oil in a deep frying pan over medium heat.

- Carefully slide the kachoris into the hot oil, a few at a time.

- Fry until they turn golden brown and crisp on both sides.

- Remove and drain on paper towels.

Serve:

- Serve the hot Sattu Kachoris with green chutney or sweet chutney for a delicious tea-time treat.
