Ingredients
4 medium-sized potatoes, peeled and cubed
200 grams green beans, trimmed and cut into bite-sized pieces
1 onion, finely chopped
2 tomatoes, finely chopped
2 green chilies, slit lengthwise (adjust to taste)
1 teaspoon ginger-garlic paste
1 teaspoon cumin seeds
1 teaspoon turmeric powder
1 teaspoon coriander powder
1/2 teaspoon red chili powder (adjust to taste)
1/2 teaspoon garam masala
Salt to taste
Fresh coriander leaves for garnish
2 tablespoons oil
Method
- Heat oil in a large pan or skillet over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Stir in the ginger-garlic paste and green chilies. Cook for a minute until the raw smell disappears.
- Add the chopped tomatoes and cook until they turn soft and mushy.
- Now, add the turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for a minute to allow the spices to release their flavors.
- Add the cubed potatoes and green beans to the pan. Mix everything together, ensuring that the vegetables are coated with the spice mixture.
- Cover the pan and let the vegetables cook on low heat for about 20 minutes or until the potatoes and green beans are tender, stirring occasionally.
- Sprinkle garam masala over the cooked vegetables and give it a final stir.
- Garnish with fresh coriander leaves.
