Ingredients for Walnut Chikki
1 cup walnuts (crushed or chopped)
1/2 cup jaggery (grated or chopped)
1 tbsp ghee (clarified butter)
1/2 tsp cardamom powder (optional)
A pinch of salt (optional)
How to Make Walnut Chikki
To make walnut chikki, start by lightly toasting the walnuts in a pan over medium heat for a few minutes until they release a nutty aroma. Once toasted, set them aside to cool. In the same pan, melt 1 tablespoon of ghee over medium heat, and then add 1/2 cup of grated or chopped jaggery.
Stir occasionally to ensure the jaggery melts evenly without burning. Once melted, add a pinch of salt (optional) and 1/2 teaspoon of cardamom powder for added flavor. Stir well, and once the jaggery syrup is smooth and bubbling, add the toasted walnuts to the pan. Stir the walnuts into the syrup, ensuring they are evenly coated, and cook for an additional 1-2 minutes to let the flavors meld. Next, pour the walnut and jaggery mixture onto a greased flat surface or parchment paper-lined tray. Use a spatula or rolling pin to flatten it into an even layer.
