Apple n Tomato Cocktail

INGREDIENTS:

Chopped tomatoes – 1 cup
Chopped apples – ½ cup
Water – 1 cup
Honey – to taste Ice cubes

METHOD:

1. Deskin the tomatoes & chop.
2. Add chopped apples, honey, water & liquidize.
3. It is not necessary to strain.
4. Add crushed ice & serve.

Kaju Kothimbir Vadi

INGREDIENTS:

Besan – ¾ cup
Makai ka atta – ¼ cup
Minced green chillies, ginger & garlic – each 2 tsp or to taste
Garam masala – 1 tsp
Chopped cashews – 2 tbsp
Salt & haldi Oil – to shallow fry

METHOD:

1. Heat 2 cups of water.
2. When it boils, remove ¼ cup and reserve.
3. Add haldi, salt and masalas.
4. When water is boiling add flours and corriander and go on stirring till they are well cooked.
5. Simmer & cook, adding from the reserved water if necessary.
6. Cool & empty on a greased plate.
7. When well set, cut into squares & shallow fry.

Strawberry Cheesecake

INGREDIENTS:

For the crust:

Mix together: Digestive/marie biscuits - 10, powdered
Powdered sugar - 2 tbsp
Melted butter - 3 tbsp
- Take an 8"loose bottom tin & press the mixture evenly on the bottom plate & chill.

Filling:

Agaragar (china grass) - 5 gms
Strawberry juice - 200 ml (readymade juice carton is OK)
Strawberry custard powdr - 2 tbsp
Sugar - 2 tbsp
Freshly crushed strawberry pulp - 4 tbsp

METHOD:

1. Line the tin with greased(with oil) butter paper before placing the crust.
2. To prevent the cheesecake from sticking to the knife while slicing, remember to dip the knife into hot water and wipe away the excess water. Then slice the cake and wipe the knife clean between each cut.
3. Soak china grass in 3 tablespoon of water for 30 minutes.
4. Melt on very slow flame and keep warm.
5. Make strawberry custard with juice, custard powder and sugar.
6. When it thickens, add china grass solution, simmer together and remove.
7. Strain and cool.
8. Add fresh fruit pulp and pour on the crust.
9. Chill till firm.
10. Decorate with fresh strawberries
